Preparation
- In a medium bowl, combine shrimp, olive oil, garlic, Italian seasoning, salt, and pepper. Toss and marinate for 5 minutes.
- Heat a non-stick skillet over medium-high heat. Add shrimp in a single layer, cooking for 2-3 minutes on each side until pink.
- In a large mixing bowl, add salad greens, cherry tomatoes, cucumber, and red onion. Toss to combine.
- Place cooked shrimp on top of the salad and sprinkle with feta cheese and pistachios.
- Drizzle with remaining Italian olive oil and lemon juice. Toss lightly to coat.
- Garnish with fresh parsley or basil and serve immediately.
