Ingredients
  

For the Salad
  • 1 lb shrimp peeled and deveined
  • 4 cups salad greens mixed arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 medium red onion thinly sliced
For the Dressing
  • 3 tbsp Italian olive oil extra virgin recommended
  • 2 cloves minced garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp Italian seasoning
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
For the Toppings
  • 1/2 cup feta cheese crumbled
  • 1/4 cup roasted pistachios

Method
 

Preparation
  1. In a medium bowl, combine shrimp, olive oil, garlic, Italian seasoning, salt, and pepper. Toss and marinate for 5 minutes.
  2. Heat a non-stick skillet over medium-high heat. Add shrimp in a single layer, cooking for 2-3 minutes on each side until pink.
  3. In a large mixing bowl, add salad greens, cherry tomatoes, cucumber, and red onion. Toss to combine.
  4. Place cooked shrimp on top of the salad and sprinkle with feta cheese and pistachios.
  5. Drizzle with remaining Italian olive oil and lemon juice. Toss lightly to coat.
  6. Garnish with fresh parsley or basil and serve immediately.
