For the Shrimp
  • 1 pound Large Shrimp peeled, deveined, and patted dry
  • 2 tablespoons Olive Oil extra virgin preferred
  • 3 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 tablespoons Fresh Dill or substitute with parsley, basil, or mint
For the Veggies
  • 1 cup Cherry Tomatoes ripe
  • 5 ounces Spinach or substitute with kale or arugula
For Topping
  • 1 cup Feta Cheese crumbled; or substitute with goat cheese or shaved parmesan
  • 1/4 cup Red Onion finely chopped, optional

Method
 

Step-by-Step Instructions
  1. Cook Orzo: Bring a pot of salted water to a boil. Add orzo and cook for 8–10 minutes until al dente. Drain and mix with olive oil, lemon juice, and chopped dill.
  2. Preheat Oven: Preheat your oven to 400°F (200°C) for roasting the shrimp.
  3. Prepare Shrimp: Toss shrimp with olive oil, garlic, salt, pepper, and dill in a bowl. Spread on a baking sheet.
  4. Roast Shrimp: Roast shrimp in the oven for 8–10 minutes until pink and opaque.
  5. Roast Tomatoes: Toss cherry tomatoes with olive oil, salt, and pepper. Roast on a separate sheet for 10–12 minutes until bursting.
  6. Sauté Spinach: In a skillet, add olive oil and sauté spinach for 2–3 minutes until wilted. Season lightly with salt.
  7. Assemble Bowls: Serve orzo at the bottom of each bowl. Top with shrimp, roasted tomatoes, sautéed spinach, feta, and lemon zest.
