Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. Cream together the softened unsalted butter and granulated sugar in a large mixing bowl until light and fluffy.
  3. Add one large egg and a splash of vanilla extract to the mixture and mix on low speed until fully blended.
  4. Whisk together the all-purpose flour, baking soda, and kosher salt; slowly combine with the wet ingredients until just mixed.
  5. Gently fold in the miniature marshmallows to maintain their integrity.
  6. Scoop out 1½-inch balls of dough and place them on the baking sheets, about 2 inches apart. Bake for 10 to 12 minutes.
  7. Cool the cookies on the baking sheets for about 5 minutes before pressing down in the center to create a crater for decorations.
  8. Decorate cookies with candy eyes, orange sanding sugar, mini chocolate chips, and optional red sanding sugar.
