  • 3 large overripe bananas mashed
  • ½ cup unsalted butter melted
  • cup granulated sugar can substitute with raw or coconut sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour or gluten-free 1:1 baking flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon optional
  • ¼ teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with unsalted butter or non-stick spray.
  2. Mash the overripe bananas in a mixing bowl until smooth with some small chunks.
  3. Mix the melted butter into the mashed bananas until well combined.
  4. Whisk in the sugar, eggs, and vanilla extract until just blended.
  5. Fold in the flour, baking soda, baking powder, cinnamon, and salt until combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Allow the bread to cool in the pan for 5-10 minutes before transferring to a wire rack.
