  • 1 tablespoon Lemon Juice preferably fresh
  • 1 teaspoon Celery Seed optional

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, combine peeled and deveined shrimp with baking soda, kosher salt, and Old Bay seasoning. Toss well and let marinate for 15–20 minutes.
  2. Fill a large bowl with ice water to prepare an ice bath for the shrimp after poaching.
  3. Bring 8 cups of water to a rolling boil and squeeze the juice of one fresh lemon into the water.
  4. Add the marinated shrimp to the boiling water and cook for exactly 90 seconds. Transfer to the ice bath immediately.
  5. In a medium bowl, whisk together diced celery, red onion, fresh dill, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and optional celery seed.
  6. Gently fold the cooled shrimp into the dressing mixture, tossing until everything is evenly coated.
  7. Cover the salad and refrigerate for at least 2 hours, ideally overnight.
  8. Before serving, drain excess liquid if desired and garnish with fresh dill or Old Bay seasoning.
