Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil.
  2. Mash the ripe bananas until smooth, then stir in eggs and melted coconut oil until well combined.
  3. In another bowl, whisk together almond flour, baking powder, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Mix together coconut sugar, almond flour, cinnamon, and melted coconut oil until crumbly for the streusel.
  6. Layer half of the banana bread batter in the prepared pan, followed by half the streusel, and repeat with remaining batter and streusel.
  7. Bake for 45-55 minutes or until a toothpick comes out clean; cover with foil if browning too quickly.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
