Ingredients
  

Dough
  • 1/2 cup Unsalted Butter Melted
  • 1 cup Whole Milk Warm to 115-120°F
  • 2 tablespoons Granulated Sugar
  • 2 1/4 teaspoons Active Dry Yeast
  • 1 large Egg
  • 1 large Egg Yolk
  • 3/4 cup Pumpkin Puree
  • 4 3/4 to 5 cups All-Purpose Flour Adjust based on humidity
  • 1 teaspoon Kosher Salt
Filling
  • 1 cup Dark Brown Sugar
  • 1 tablespoon Ground Cinnamon
  • 1 1/2 teaspoons Pumpkin Pie Spice
  • 1/4 cup Unsalted Butter Softened
Baking
  • 1/3 cup Heavy Cream Optional but recommended
Icing
  • 8 oz Cream Cheese Softened
  • 1/4 cup Powdered Sugar
  • 2 teaspoons Vanilla Essence

Method
 

Preparation
  1. Prepare brown butter by melting ½ cup of unsalted butter in a saucepan until golden brown.
  2. Activate the yeast by combining warm milk, sugar, and yeast, letting it sit until foamy.
  3. Mix dough by adding remaining ingredients, kneading until smooth and elastic.
  4. Let the dough rise in a greased bowl covered with a towel for about 1 hour.
  5. Prepare filling by mixing brown sugar, pumpkin puree, cinnamon, and pumpkin pie spice.
  6. Roll the dough into a rectangle, spread butter, layer the filling, roll and cut into pieces.
  7. Let the rolls rise again in a baking pan for 30 minutes while preheating the oven.
  8. Bake at 350°F for about 30 minutes until golden brown.
  9. Prepare icing by mixing cream cheese, powdered sugar, and vanilla until smooth.
  10. Spread icing over warm rolls before serving.
