- Gather a large mixing bowl. Dice 2 ripe mangoes into small chunks, shred half a head of green cabbage until you have about 4 cups, grate 1 medium carrot, slice 1 red bell pepper into thin strips, and finely slice half a red onion. Add all these ingredients to the mixing bowl.
- In a separate bowl, whisk together the juice of 2 limes, 2 tablespoons of honey (or maple syrup), and 2 tablespoons of sesame oil. Season with salt and pepper to taste. Whisk until the mixture is well blended.
- Pour the dressing over the mango and vegetable mixture in the large bowl. Toss everything together until the ingredients are evenly coated with the dressing.
- Allow the slaw to sit at room temperature for about 5-10 minutes to meld the flavors.
- After letting your slaw rest, give it one final toss to refresh the ingredients. Serve either chilled or at room temperature.
