Step-by-Step Instructions
  1. Gather a large mixing bowl. Dice 2 ripe mangoes into small chunks, shred half a head of green cabbage until you have about 4 cups, grate 1 medium carrot, slice 1 red bell pepper into thin strips, and finely slice half a red onion. Add all these ingredients to the mixing bowl.
  2. In a separate bowl, whisk together the juice of 2 limes, 2 tablespoons of honey (or maple syrup), and 2 tablespoons of sesame oil. Season with salt and pepper to taste. Whisk until the mixture is well blended.
  3. Pour the dressing over the mango and vegetable mixture in the large bowl. Toss everything together until the ingredients are evenly coated with the dressing.
  4. Allow the slaw to sit at room temperature for about 5-10 minutes to meld the flavors.
  5. After letting your slaw rest, give it one final toss to refresh the ingredients. Serve either chilled or at room temperature.
