Method
 

Preparation
  1. Begin by rinsing and hulling each strawberry, removing the green tops. Use a sharp paring knife to gently hollow out the centers.
  2. In a mixing bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  3. Transfer the cheesecake mixture into a piping bag and carefully squeeze the filling into each hollowed strawberry until it overflows slightly.
  4. Dip the tops of each filled strawberry into the graham cracker crumbs and place a fresh blueberry on top of each.
  5. Arrange strawberries on a serving platter and refrigerate for at least 30 minutes before serving.
