  • 1 medium Pineapple Ripe and juicy, chopped into bite-sized pieces.
  • 2 medium Cucumbers Firm, sliced into thin rounds.
  • 0.5 small Red Onion Finely chopped; soak in cold water for 10 minutes if needed.
  • 0.25 cup Cilantro Chopped; can substitute with mint or omit.
For the Dressing
  • 2 tablespoons Lime Juice Freshly squeezed, adjust to taste.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper Freshly ground, to taste.

Method
 

Preparation
  1. Chop pineapple into bite-sized pieces and slice cucumbers into thin rounds.
  2. Finely chop the red onion and soak in cold water for 10 minutes to mellow the flavor.
  3. In a large bowl, combine chopped pineapple, sliced cucumber, diced red onion, and cilantro.
  4. Squeeze lime juice over the mixture, and toss gently to coat.
  5. Season with salt and pepper, then refrigerate for at least 30 minutes.
  6. Give a final toss before serving and plate elegantly.
