  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil For frying
For the Slaw
  • 2 cups shredded green cabbage
  • 1 cup plain Greek yogurt
  • 2 tablespoons white distilled vinegar Adjust to taste
  • 1 tablespoon olive oil For slaw

Method
 

Salmon Burger Preparation
  1. Flake the cooked salmon in a large mixing bowl, ensuring there are no bones and allow it to cool slightly.
  2. Mix in the eggs, breadcrumbs, salt, garlic powder, fresh herbs, and lemon juice until just combined.
  3. Shape into 3 large or 4 medium patties and chill in the fridge for 15-20 minutes.
  4. Heat a nonstick skillet over medium heat and add olive oil until shimmering.
  5. Fry the patties for 3-4 minutes on each side or until golden brown, then transfer to a paper towel-lined plate.
Slaw Preparation
  1. Combine shredded cabbage, Greek yogurt, vinegar, salt, garlic powder, fresh herbs, and olive oil in a separate bowl.
  2. Toss until the cabbage is coated and adjust seasoning to taste.
Serving
  1. Serve each salmon burger atop a bed of creamy slaw, adding extra garnishes if desired.
