  • 1 cup Shredded Cheese cheddar or pepper jack
  • 2 tablespoons Mayo or Greek yogurt
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Avocado Corn Salsa
  • 1 cup Fresh Corn or frozen corn
  • 1 medium Avocado ripe
  • 1/4 cup Cilantro or parsley
  • 2 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Lime Juice or lemon juice

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, chopped scallions, shredded cheese, mayo, salt, and pepper. Mix until just combined.
  2. With wet hands, shape the chicken mixture into 8 uniform patties, each about ½ inch thick.
  3. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  4. Carefully place the patties on the grill. Grill for 5 minutes, flip, and grill for another 5 minutes or until fully cooked.
  5. For the salsa, remove corn kernels, dice avocado, and mix with cilantro, olive oil, lime juice, salt, and pepper.
  6. Once cooked, top each burger with Avocado Corn Salsa and serve immediately.
