Method
 

Cooking Instructions
  1. Preheat the broiler to high and season the chicken with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and sauté the chicken for 1-2 minutes on each side until browned.
  3. Sauté the chopped onion in the same skillet for 8-10 minutes until golden, then add garlic.
  4. Mix in the pureed tomatoes, water, sugar, oregano, and pepper flakes. Season to taste, and let simmer for 5-7 minutes.
  5. Return the chicken to the skillet, coat with sauce, and sprinkle feta on top. Boil gently for 2-3 minutes.
  6. Broil for 5-8 minutes until the cheese is melted and slightly golden.
  7. Garnish with scallions and serve with crusty bread or herbed rice.
