Preparation
- Slice the flank steak against the grain into thin strips, about 1/4 inch thick. In a bowl, combine beef with soy sauce, peanut oil, and cornstarch, marinating for at least 10 minutes.
- In a separate bowl, whisk together stock, Shaoxing wine, dark soy sauce, brown sugar, and an additional teaspoon of cornstarch.
- Bring a skillet filled with an inch of water to simmer. Add broccoli and steam for about 1 minute.
- In the same skillet, heat 2 tablespoons of peanut oil over high heat. Spread marinaded beef, searing for 30 seconds and flipping for another 1-2 minutes until browned.
- Add garlic and ginger to the skillet, stir-frying for about 30 seconds until fragrant.
- Return broccoli to the skillet, pour in prepared sauce, stirring together and cooking for an additional 1-2 minutes until sauce thickens.
