Beef
  • 1 lb Flank Steak or Skirt Steak
  • 1/2 tsp Baking Soda optional
Sauce
  • 1 tbsp Soy Sauce or Tamari for gluten-free
  • 1 tsp Dark Soy Sauce or regular soy sauce
  • 2 tsp Brown Sugar or white sugar
  • 1/2 cup Chicken or Beef Stock or water for lighter flavor
  • 2 tbsp Shaoxing Wine or Dry Sherry, skip if avoiding alcohol
Cooking
  • 2 tbsp Peanut Oil or vegetable oil
  • 2 tbsp Cornstarch
Vegetables
  • 1 head Broccoli cut into florets
  • 3 cloves Garlic minced
  • 2 tsp Ginger minced

Method
 

Preparation
  1. Slice the flank steak against the grain into thin strips, about 1/4 inch thick. In a bowl, combine beef with soy sauce, peanut oil, and cornstarch, marinating for at least 10 minutes.
  2. In a separate bowl, whisk together stock, Shaoxing wine, dark soy sauce, brown sugar, and an additional teaspoon of cornstarch.
  3. Bring a skillet filled with an inch of water to simmer. Add broccoli and steam for about 1 minute.
  4. In the same skillet, heat 2 tablespoons of peanut oil over high heat. Spread marinaded beef, searing for 30 seconds and flipping for another 1-2 minutes until browned.
  5. Add garlic and ginger to the skillet, stir-frying for about 30 seconds until fragrant.
  6. Return broccoli to the skillet, pour in prepared sauce, stirring together and cooking for an additional 1-2 minutes until sauce thickens.
