- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes.
- Add chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until translucent.
- Mix in ground cumin, chili powder, salt, and pepper for another minute.
- Pour 1/2 cup of enchilada sauce in the bottom of the baking dish.
- Fill each tortilla with the beef mixture and some cheese, then roll tightly and place seam-side down in the dish.
- Top the rolled enchiladas with the remaining enchilada sauce and cheese.
- Bake for 20-25 minutes until the cheese is bubbly and slightly browned.
- Garnish with cilantro before serving warm.
