  • 6 Flour Tortillas corn tortillas can be used for a gluten-free option
For the Sauce and Topping
  • 2 cups Enchilada Sauce or homemade version of tomato sauce mixed with chili powder and garlic
  • 2 cups Shredded Cheddar Cheese or mozzarella/dairy-free alternative as needed
  • 1/4 cup Chopped Fresh Cilantro optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes.
  3. Add chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until translucent.
  4. Mix in ground cumin, chili powder, salt, and pepper for another minute.
  5. Pour 1/2 cup of enchilada sauce in the bottom of the baking dish.
  6. Fill each tortilla with the beef mixture and some cheese, then roll tightly and place seam-side down in the dish.
  7. Top the rolled enchiladas with the remaining enchilada sauce and cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and slightly browned.
  9. Garnish with cilantro before serving warm.
