  • 3-4 lbs. Organic Chicken skin removed
  • 1-2 Tbsps. Browning optional
For the Seasoning
  • 2-3 Tbsps. Jamaican Green Seasoning can substitute with all-purpose seasoning
  • 2 Tbsps. Jamaican Curry Powder
  • 2.5 Tbsps. Jamaican Curry Powder additional
  • 1 tsp. Sea Salt
  • ½ tsp. Smoked Paprika
  • 1 tsp. Ground Allspice
  • Black Pepper to taste
For Cooking
  • 4 Tbsps. Olive Oil
  • 2 Tbsps. Brown Sugar optional
For the Sauce and Vegetables
  • 1 can (14 oz.) Coconut Milk full-fat
  • 2 medium Potatoes peeled and cubed
  • 2 medium Carrots peeled and chopped
  • 1 medium Bell Pepper chopped
  • 3 cloves Garlic minced
  • 2 tsps. Ginger minced fresh or ½ tsp. ground
  • 1-3 Scotch Bonnet Peppers whole or chopped
  • 2 Green Onions (Scallion) lightly crushed or chopped
  • 2 sprigs Fresh Thyme
  • 1 cup Chicken Stock low-sodium
  • 1 Tbsp. Jamaican Pepper Sauce optional

Method
 

Step-by-Step Instructions
  1. Marinate the Chicken: Clean the chicken and place it in a mixing bowl. Add browning, Jamaican green seasoning, sea salt, and spices, ensuring the chicken is well-coated. Cover and refrigerate for at least 3 hours or overnight.
  2. Brown the Chicken: Heat olive oil over medium heat. Add brown sugar and stir until dissolved. Sear the marinated chicken for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. Burn the Curry Powder: In the same skillet, add Jamaican curry powder and stir continuously for 2-3 minutes until fragrant and dark.
  4. Make the Curry Sauce: Add garlic, ginger, scotch bonnet peppers, and green onions to the skillet and sauté for 1-2 minutes. Pour in coconut milk and chicken stock. Optionally add Jamaican pepper sauce and bring to boil.
  5. Combine: Add the browned chicken, potatoes, carrots, and thyme. Stir and reduce heat to low. Simmer for 20-25 minutes until the sauce thickens and chicken is cooked.
  6. Serve: Plate the Jamaican Curry Chicken with rice or sides. Garnish with green onions or herbs and enjoy the rich flavors.
