Method
 

Cooking Instructions
  1. Heat the oil in a large pan or wok over medium heat until shimmering, about 1-2 minutes. Add chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and diced carrot to the pan, and sauté for another 2-3 minutes until the carrots are tender.
  3. Stir in the chopped kimchi and reserved juice, cooking for about 3-4 minutes until softened.
  4. Add day-old rice, breaking up clumps, and stir-fry for approximately 5 minutes until heated through.
  5. Push the rice mixture to one side, pour in beaten eggs, and cook undisturbed for about 2 minutes before scrambling.
  6. Drizzle in soy sauce to taste, toss everything together, and cook for an additional minute. Garnish with sesame seeds and green onions.
