- Mix poultry seasoning, Creole or Cajun seasoning, onion powder, garlic powder, paprika, and celery salt in a bowl; coat turkey wings.
- In a greased roasting pan, arrange turkey wings and scatter sliced onions and bell peppers around them.
- Thinly slice butter and place it atop the turkey wings.
- Cover with aluminum foil and bake for 75 minutes.
- Drain pan drippings into a measuring cup, separating fat. Whisk fat with flour in a saucepan over medium heat until golden.
- Gradually stir in chicken stock and reserved drippings until smooth and thickened.
- Pour gravy over turkey wings, cover, and bake for an additional 30-40 minutes.
