Cooking Steps
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat for 7-10 minutes. Drain excess fat.
- Add diced onion and minced garlic to the skillet, sauté for 4-5 minutes until the onion is translucent.
- Stir in the diced tomatoes and Italian seasoning, cook for another 5 minutes.
- In a large casserole dish, spread cooked rice (if using) on the bottom. Pour beef mixture on top.
- Layer sliced zucchini over the beef mixture and sprinkle shredded cheese on top.
- Bake uncovered for 30 minutes or until zucchini is tender and cheese is golden brown.
- Let the casserole rest for a few minutes before serving.
