Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat for 7-10 minutes. Drain excess fat.
  3. Add diced onion and minced garlic to the skillet, sauté for 4-5 minutes until the onion is translucent.
  4. Stir in the diced tomatoes and Italian seasoning, cook for another 5 minutes.
  5. In a large casserole dish, spread cooked rice (if using) on the bottom. Pour beef mixture on top.
  6. Layer sliced zucchini over the beef mixture and sprinkle shredded cheese on top.
  7. Bake uncovered for 30 minutes or until zucchini is tender and cheese is golden brown.
  8. Let the casserole rest for a few minutes before serving.
