Preparation
- Preheat your oven to 375°F (190°C).
- Slice the baguette into 1/2-inch thick pieces and arrange on a baking sheet. Toast for 5-7 minutes until golden.
- Rub the toasted baguette slices with a halved garlic clove.
- In a bowl, combine diced Roma tomatoes, basil, minced garlic, olive oil, salt, and pepper. Let it sit for 10 minutes.
- Arrange toasted baguette slices in a circular wreath shape on a platter.
- Top each baguette slice with the tomato mixture and dollops of soft white cheese.
- Garnish with fresh rosemary and drizzle with olive oil before serving.
