  • 2 stalks Green Onion Finely chopped
  • 1 medium Sweet Bell Red Pepper Diced, can substitute with yellow or orange peppers
  • 1 cup Fresh Bean Sprouts Rinsed
  • 1/4 cup Cilantro Chopped, can substitute with parsley
For the Dressing
  • 3 tablespoons Sweet Chili Sauce
  • 1 medium Lime Juice and zest
  • 1 tablespoon Fresh Ginger Grated
  • 1 clove Garlic Minced
  • 1 teaspoon Fish Sauce Optional, can substitute with light soy sauce

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, whisk together the dressing ingredients: sweet chili sauce, lime juice and zest, ginger, garlic, and fish sauce.
  2. Peel the ripe mango and slice it into thin strips.
  3. Finely chop the green onions and dice the sweet bell red pepper, then rinse the bean sprouts.
  4. In a large mixing bowl, combine the salad ingredients: mango strips, green onions, bell pepper, and bean sprouts.
  5. Add cilantro and gently mix the salad ingredients together.
  6. Just before serving, pour the dressing over the salad and toss gently to coat.
  7. Taste and adjust seasonings if necessary before serving.
