- Season the chicken breasts generously with salt and pepper on both sides. Place the seasoned chicken into the slow cooker.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1–2 minutes.
- Pour the sautéed garlic and fig jam over the seasoned chicken in the slow cooker. Gently stir to combine the ingredients.
- Cover the slow cooker and set it to low heat. Allow the chicken to cook for 4 to 6 hours.
- About 15 minutes before serving, gently crumble goat cheese over the top of the chicken.
- Ladle some of the fig jam sauce from the slow cooker over the chicken. Serve warm.
