  • 1/4 cup balsamic vinegar can substitute with apple cider vinegar
  • 1 teaspoon fresh thyme can substitute with dried thyme at a 1/3 ratio
For the Topping
  • 4 ounces goat cheese can use feta or blue cheese

Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper, ensuring they are evenly coated.
  2. In a medium skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Set aside.
  3. Place the seasoned chicken breasts in the slow cooker. Pour sautéed garlic over them. Drizzle balsamic vinegar and spoon fig jam on top. Sprinkle thyme and mix gently.
  4. Cover and cook on low for 4-6 hours until the internal temperature reaches 165°F (74°C).
  5. In the final 15 minutes, uncover and sprinkle goat cheese over the chicken. Re-cover and allow to melt.
  6. Serve warm, drizzling fig sauce from the slow cooker over the chicken and garnish with additional thyme.
