  • 1/4 cup Soy sauce
  • 4 cloves Garlic minced
  • 1 tablespoon Grated ginger
For the Vegetables
  • 1 each Bell pepper chopped
  • 2 cups Broccoli florets
  • 1 cup Carrots sliced
  • 1 cup Snap peas optional
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Thickening (Optional)
  • 2 tablespoons Cornstarch
  • 1/4 cup Water

Preparation Steps
  1. Trim excess fat from the chicken breasts and pat them dry.
  2. Season the chicken with salt, pepper, and paprika.
  3. Place the seasoned chicken in the slow cooker.
  4. Whisk together honey, soy sauce, garlic, and ginger in a bowl.
  5. Pour the sauce over the chicken.
  6. Layer the chopped bell pepper, broccoli, carrots, and snap peas on top.
  7. Cover and cook on low for 6-8 hours.
  8. If thickening, mix cornstarch with water and add after 30 minutes.
  9. Check for doneness at 4-5 hours, adjusting seasoning if necessary.
  10. Serve hot over rice or quinoa.
