Preparation Steps
- Trim excess fat from the chicken breasts and pat them dry.
- Season the chicken with salt, pepper, and paprika.
- Place the seasoned chicken in the slow cooker.
- Whisk together honey, soy sauce, garlic, and ginger in a bowl.
- Pour the sauce over the chicken.
- Layer the chopped bell pepper, broccoli, carrots, and snap peas on top.
- Cover and cook on low for 6-8 hours.
- If thickening, mix cornstarch with water and add after 30 minutes.
- Check for doneness at 4-5 hours, adjusting seasoning if necessary.
- Serve hot over rice or quinoa.
