  • 1 cup Diced White Onion
  • 1 cup Diced Bell Pepper
  • 0.5 cup Ketchup For meat mixture

  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 cup Saltine Crackers (crumbled) Use gluten-free for a gluten-free option
For the Sauce
  • 0.5 cup Ketchup For glaze
  • 0.25 cup Brown Sugar Can substitute with honey
  • 1 tablespoon Mustard
  • 1 tablespoon Worcestershire Sauce

Preparation Steps
  1. Combine eggs, diced onions, bell peppers, ketchup, milk, onion powder, salt, and pepper in a large mixing bowl.
  2. Crush the saltine crackers into fine crumbs and fold them into the mixture.
  3. Gently fold in the ground beef until just combined.
  4. Shape the mixture into a loaf and place it in the slow cooker.
  5. Cover and cook on LOW for 5 to 6 hours.
  6. Mix ketchup, brown sugar, mustard, and Worcestershire sauce to prepare the sauce in the last 30 minutes of cooking.
  7. Spoon the sauce over the meatloaf and cook for an additional 30 minutes.
  8. Let the meatloaf rest for about 10 minutes before slicing.
