Ingredients

For the Chicken
  • 1.5 lbs Boneless, skinless chicken This main protein source keeps the dish moist and tender during cooking.
  • 1 Medium onion, diced Adds depth of flavor; can substitute with shallots for a milder taste.
  • 4–5 cloves Garlic, minced Enhances the overall flavor profile; fresh garlic is recommended for the best results.
For the Cooking Liquid
  • 2 tbsp Olive oil or butter Provides richness; substitute olive oil for a dairy-free version.
  • 4 cups Low-sodium chicken broth Acts as the cooking liquid, infusing flavors; can substitute with vegetable broth for a lighter dish.
For the Herbs and Spices
  • 1 tsp Thyme Brings an earthy, subtle note to the dish.
  • 1 tsp Oregano Offers a hint of sweetness; fresh herbs can be used if available.
  • ½ tsp Rosemary Adds a fragrant, woodsy flavor that complements the chicken.
  • ¼ tsp Red pepper flakes Adds a subtle heat; omit for a milder flavor.
  • Salt & pepper to taste Enhances overall seasoning.
For the Pasta and Creaminess
  • 1 cup Orzo pasta Absorbs flavors and thickens the dish; orzo works best, but other small pasta can be used.
  • 1 cup Grated Parmesan Adds creaminess and a nutty taste; nutritional yeast can be used as a dairy-free alternative.
  • ¼–½ cup Heavy cream or half-and-half Optional for added richness; skip for a lighter version.
For the Fresh Finish
  • ¼ cup Parsley, chopped Fresh garnish for brightness; adds a pop of color.
  • 1 tbsp Lemon juice Brightens the dish; can use lime juice for a different zing.

Equipment

  • slow cooker
  • Skillet

Method

Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil or butter in a skillet over medium-high heat. Sear the boneless, skinless chicken for about 2 minutes on each side until they develop a lovely golden color.
  2. In your slow cooker, combine the diced onion, minced garlic, thyme, oregano, rosemary, red pepper flakes, salt, and pepper. Pour in 4 cups of low-sodium chicken broth.
  3. Carefully place the seared chicken on top of the mixture in the slow cooker. Cover the slow cooker with its lid.
  4. Set your slow cooker to low and allow your Slow Cooker Parmesan Herb Chicken to cook for 4 to 5 hours.
  5. Once the chicken is tender, stir in 1 cup of orzo pasta. Cover the slow cooker again, and let it cook for an additional 20 to 25 minutes on high.
  6. After the orzo is perfectly cooked, stir in 1 cup of grated Parmesan cheese, ¼ to ½ cup of heavy cream, chopped parsley, and 1 tablespoon of lemon juice.
  7. Spoon the creamy chicken and orzo into bowls while it's warm. Top with extra Parmesan and fresh herbs for a beautiful finish.

Notes

Searing the chicken enhances flavor, and ensure enough broth to prevent orzo from sticking. Stir the orzo halfway through cooking for perfect texture.
