  • 4 cups Sweet Onions or yellow/white onions with added sugar
  • 1 cup Sour Cream can be substituted with Greek yogurt
  • 2 cups Sharp Cheddar Cheese or Gruyere/Monterey Jack
  • 1 teaspoon Salt use kosher salt or sea salt
  • 0.5 teaspoon Black Pepper can use white pepper instead
  • 1 teaspoon Garlic Powder fresh minced garlic can also be used
  • 1 teaspoon Onion Powder omit if using stronger onion varieties
  • 0.25 teaspoon Cayenne Pepper optional, adjust to taste
For the Topping
  • 1 cup Buttery Round Crackers gluten-free alternatives can be used
  • 3 tablespoons Unsalted Butter melted
  • Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt 3 tablespoons of unsalted butter in a large skillet over medium heat, then add sliced sweet onions and sauté for 10 to 15 minutes until soft and translucent.
  3. In a mixing bowl, combine 1 cup of sour cream, 2 cups of shredded sharp cheddar cheese, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder, mixing well.
  4. Gently fold the sautéed onions into your creamy mixture until well coated.
  5. Crush the buttery round crackers and mix them with 3 tablespoons of melted butter, reserving some for topping.
  6. Grease a 9x13-inch baking dish and pour the onion-cheese mixture into it, spreading evenly.
  7. Sprinkle the reserved cracker mixture over the top of the casserole.
  8. Bake in the preheated oven for 30 to 35 minutes until the top is golden brown and bubbly.
  9. Cool for about 10 minutes before serving, garnished with fresh parsley.
