- Wash cucumbers under cold water, scrubbing gently. Slice cucumbers thinly, about 1/8 inch thick, and place them in a large bowl.
- In a medium bowl, combine minced garlic, Korean chili powder, soy sauce, rice vinegar, sesame oil, and sugar. Whisk until sugar dissolves.
- Pour the dressing over the cucumbers and toss gently to coat.
- Cover and let the salad marinate for about 10 to 30 minutes at room temperature.
- Give the salad a final toss and transfer to a serving dish, optionally sprinkle with sesame seeds or chopped green onions before serving.
