  • 2 cups Pasta any shape like rotini or penne
Salad
  • 2 cups Street Corn grilled or roasted
  • 1 medium Red Bell Pepper diced
  • 0.5 medium Red Onion chopped, soaked in cold water
  • 0.5 cup Cilantro chopped
Creamy Dressing
  • 0.5 cup Mayonnaise or Greek yogurt
  • 0.5 cup Sour Cream or plain yogurt
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Chili Powder adjust for spice level
  • to taste teaspoon Salt
  • to taste teaspoon Pepper

Method
 

Cooking
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a medium bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  3. In a large bowl, combine cooled pasta, street corn, red bell pepper, red onion, and cilantro. Toss gently.
  4. Pour dressing over the salad and fold gently until well coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
