Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Grease the bottom and sides of a 9-inch springform pan with butter and line with parchment paper.
  3. Crush graham crackers and mix with melted butter and sugar. Press into the bottom of the pan and bake for 7-8 minutes.
  4. Beat softened cream cheese until smooth. Gradually add sugar, salt, and vanilla until combined.
  5. Add eggs one at a time, mixing on low speed until just combined.
  6. Fold in sour cream, heavy cream, and lemon juice until well incorporated.
  7. Pour the filling over the cooled crust and gently tap to remove air bubbles.
  8. Wrap the springform pan with aluminum foil and place in a larger baking dish filled with hot water. Bake for 75-80 minutes.
  9. Turn off the oven, crack the door, and let the cheesecake cool for 2 hours at room temperature.
  10. After cooling, refrigerate overnight. Release from pan and serve.
