Method
 

Prepare the Patties
  1. In a large bowl, combine ground beef with kosher salt and black pepper. Mix gently to avoid overworking the meat.
  2. Divide the mixture into six portions and shape each into a 1-inch thick patty.
Cook the Patties
  1. Heat a cast iron skillet over medium-high heat with canola oil until shimmering.
  2. Cook patties for 3-5 minutes on one side, then flip and cook for another 3-5 minutes.
  3. Add a slice of American cheese on top during the last minute of cooking.
Prepare the Sauce
  1. In a separate bowl, whisk together mayonnaise, ketchup, dill pickle relish, and Dijon mustard until smooth.
Toast the Buns
  1. Cut the brioche buns in half and toast in the skillet until golden brown.
Assemble the Burgers
