Step-by-Step Instructions
  1. Prepare Tofu: Press the extra-firm tofu between clean kitchen towels for at least 15 minutes to remove excess moisture. Cut into 1-inch cubes and coat with cornstarch.
  2. Crisp Tofu: Heat oil in a skillet over medium-high heat. Add tofu cubes in a single layer, cooking for 3-4 minutes without moving. Flip and cook for another 3 minutes until golden brown.
  3. Caramelize Veggies: Add sliced bell peppers and onions to the skillet, sauté for about 5 minutes. Add garlic and ginger, stirring for 30 seconds until fragrant.
  4. Add Pineapple: Incorporate pineapple chunks, cooking for 2-3 minutes until slightly caramelized. Stir occasionally for even cooking.
  5. Combine Sauce & Tofu: Whisk together soy sauce, rice vinegar, and maple syrup. Pour over pineapple and veggies, then add crispy tofu. Toss gently for 2 minutes until well coated.
