- In another bowl, whisk together the eggs, sugar, vegetable oil, applesauce, and vanilla.
- Pour the wet mixture into the dry ingredients and mix gently to combine.
- Fold in the diced apples and toasted pecans.
- Transfer the batter to the greased loaf pan and sprinkle the topping over it.
- Bake for 55-70 minutes, checking for doneness with a toothpick.
- Cool the bread in the pan for 10-15 minutes before transferring to a wire rack.
