  • 1 cup Chopped toasted pecans Walnuts or almonds can be used as alternatives.
For the Topping
  • 1 tbsp Sugar Optional but highly recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Spread chopped pecans on a baking sheet and toast for 5-7 minutes.
  3. In a large bowl, combine the flour, cinnamon, nutmeg, salt, and baking powder.
  4. In another bowl, whisk together the eggs, sugar, vegetable oil, applesauce, and vanilla.
  5. Pour the wet mixture into the dry ingredients and mix gently to combine.
  6. Fold in the diced apples and toasted pecans.
  7. Transfer the batter to the greased loaf pan and sprinkle the topping over it.
  8. Bake for 55-70 minutes, checking for doneness with a toothpick.
  9. Cool the bread in the pan for 10-15 minutes before transferring to a wire rack.
